Mayer Nebbiolo 2021

Timo's Nebbiolo comes from the Wood vineyard, grown on a highly exposed north-facing slope at the De Bortoli Dixons Creek Estate. It's a pretty and perfumed rendition of the variety that drinks almost like Pinot in weight, though still features a prominent wash of varietal Nebbiolo tannins. Timo's use of whole bunch in this wine has a very savoury effect and as such, it avoids that confected jelly-bean character that often appears in young Australian Nebbiolo which hasn't had the extended ferment or longer maturation that the variety sees in Italy. A deliciously unique wine!

VITICULTURE: The vineyards are farmed organically.

WINEMAKING: Fruit is handpicked and pressed in whole bunches. Juice is transferred to old hogsheads to undergo wild fermentation as well as full malolactic fermentation. In spring the wine is racked into stainless steel to settle for 4 months before being bottled without fining of filtration.
