A dry season from the get-go. Winter rain was a bit below average and spring rain was virtually non-existent. Some warmth through to Christmas and into the new year. The saving grace for the vintage came in late January with falls totalling 40mm over a 12 day period, leading into the start of harvest. They proved invaluable in freshening and balancing the fruit flavours.
S T Y L E
The bouquet opens with some delicious, fine, cedary new French oak character, combined with some cigar box and leafy classic Cabernet aromas. The palate has real focus and balance not in the blockbuster manner, but more a weighty yet fine boned style with quite apparent but really fine tannin structure to finish off one of the picks of the vintage.
V I N I F I C A T I O N
Cabernet off our Estate blocks is picked when ripe, but before the berries go past softness into wrinkled. We want a richness but still a taut crisp structure for long term ageing. The berries are not crushed but de-stemmed and given an 8-10 day maceration. In most vintages the wine is put directly into 100% new French oak barriques to mature on its lees for between 24 and 30 months.
