a creamy, frothy, fruity wine that bubbles beautifully
made by the traditional or champagne method and complexed by 24 months or more on yeast lees
try it with smoked salmon and horseradish cream, oysters or on its own

blend: 90% garnacha rosado; 10% shiraz
primary fermentation: 8 hours skin contact before racking juice to settling. Very cool temperature controlled fermentation
tasting notes: nougat and toasted brioche notes are quickly followed by those of tiny wild strawberries and rosehips.  The palate is fruit driven yet creamy , elegant and with great length. 

Analysis: 12.7% alcohol pH 3.35 total acidity 6.2g/ litre sugar 9-12g / litre
