The 2015 Organic Red consists of a blend of 92% Shiraz and 8% Cabernet Sauvignon sourced from Organic vineyards around the Western Cape. The grapes were sorted, de-stemmed and crushed and wild, spontaneous fermentation took place in old oak casks. The wine was made using a method of submerging the cap, or the grape skins, which allows the wine to extract tannin from the skins rather than the oak making this wine more approachable in its youth.
Plush red berry and cherry fruit on the nose lead to alluring clove, musk and white pepper spice. The palate has juicy fruit tannins from the submerged cap ferment and limited oak contact making this red wine approachable and smooth in its youth. The palate shows redcurrant with sage and thyme freshness and polished integrated finish.
