Vinification: Strict and thorough selection of the grapes in the vineyard. Manual harvest in 15 kg boxes. Temperature controlled processing of the grapes at 10º. Manual selection at the sorting table. Soft de-stemming. Independent vinification of plots in 150 hl stainless steel tanks at 25º. Macerations adjusted to the potential of each variety and plot. Fermentation and maceration of the skins for between 18 and 22 days.
Elaboration: 16 months in new French fine oak barrels of 400l. Malolactic fermentation in barrels and aging on selected lees.
Bottling: Fining with egg albumin. Bottling by decanting depending on the moon phase.
Profile of the wine: Blend of grapes from three zones with different soils.
Tasting note:
A wine of great personality with a complex, elegant and very concentrated nose, with ripe red fruit character surrounded by mineral, spices and fine wood. Great balance among fruit, terroir and oak. In the mouth is soft, very elegant and silky, with sweet and kind tannins. Granulated texture with rich and lingering finish.
