Wine Name: I Capitelli

Geographical Location: In the Monteforte and Soave areas on Zoppega Hill and Foscarino Hill - in the vineyards near the shrines.
Vineyard Position: Top slopes of the hills
Soil Composition: Volcanic tuff in some areas and limestone in others
Grape Types: 100% Garganega, Sauvignon growing on horizontal spurred cordons
Yield per Hectare: 12 hectolitres after drying of the grapes

Cultivation method and picking: The vineyards have grass undergrowth. Very close pruning and, if necessary, thinning of the bunches in june. Selection only of the most mature straggly bunches during harvest collected in one layer in small boxes (trays). Once the bunches reach the winery they are picked over again carefully, separated from each other and left to dry in well aired rooms. In December the bunches have the right amount of noble rot vinification: after pneumatic pressing at the end of december, the very sweet must is left to ferment in small oak barrels after which it is decanted twice and then left to mature for 8 months in the same barriques (100% allier oak from the troncais forest)

Aging in Bottles: 1 year
Production: 30 000 Bottles
Shelf Life: 20 or more years.
Characteristics and notes: A complex sweet wine which goes well with lobster, excellent with paté de foie gras, cheeses and pastries.

And now for something completely different! Here we have a sweet dessert-style wine made from Garganega by cult winemaker Roberto Anselmi. It’s packed with rich smells and tastes of honey, yellow stone fruits, pineapple, earthiness and brulee that is all supported by balanced acidity, a smooth mouthfeel, and a lush, sweet finish. Try it with sticky date pudding.

Winemaker’s Note: A complex sweet wine which goes well with Lobster, excellent with pate de foie gras, cheeses and pastries.
